Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs, vanilla extract, and almond extract until combined. Add food coloring if desired.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the chopped maraschino cherries and chocolate chips.
- Drop dough by rounded tablespoons onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10–12 minutes or until edges are lightly golden. Centers will look soft — do not overbake.
- Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Make sure to pat the cherries dry to avoid excess moisture in the dough.
- Use almond extract for classic cherry flavor, or omit if preferred.
