- 2 lbs russet or Yukon gold potatoes, peeled and cubed
- 1/2 cup heavy cream (or milk)
- 4 tbsp unsalted butter
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced (optional)
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.
- Reduce the heat and simmer for 15-20 minutes or until the potatoes are fork-tender.
- Drain the potatoes and return them to the pot. Let them steam for 1-2 minutes to remove excess moisture.
- Mash the potatoes using a potato masher or ricer until smooth.
- In a small saucepan, heat the cream (or milk), butter, and garlic (if using) until the butter is melted and the mixture is warm.
- Gradually add the warm cream mixture to the mashed potatoes, stirring until creamy.
- Stir in the Parmesan cheese and season with salt and pepper to taste.
- Transfer to a serving bowl, garnish with parsley, and serve hot.
Notes
- For extra creaminess, use Yukon gold potatoes and a potato ricer.
- Adjust the amount of cream based on desired consistency.
- You can add roasted garlic instead of raw garlic for a sweeter flavor.
