Description

Meatball Lasagna Roll-Ups are a fun and flavorful twist on traditional lasagna! Tender lasagna noodles are rolled up with creamy ricotta, marinara, and juicy meatballs, then topped with gooey mozzarella and baked to bubbly perfection. Perfect for weeknight dinners or meal prep, these roll-ups offer all the comfort of classic lasagna in a convenient, individualized form.

  • 10 lasagna noodles, cooked al dente
  • 1 1/2 cups ricotta cheese
  • 1 egg
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce, divided
  • 20 small cooked meatballs (homemade or store-bought)
  • 1 1/2 cups shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a bowl, mix ricotta cheese, egg, Parmesan, Italian seasoning, salt, and pepper until smooth.
  3. Spread 1 cup of marinara sauce evenly on the bottom of the baking dish.
  4. Lay cooked lasagna noodles flat on a clean surface. Spread 2–3 tablespoons of the ricotta mixture onto each noodle.
  5. Place two small meatballs on each noodle and roll up tightly from one end to the other.
  6. Arrange the roll-ups seam-side down in the prepared dish.
  7. Pour the remaining marinara sauce over the top, then sprinkle with mozzarella cheese.
  8. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and bubbly.
  9. Garnish with fresh basil or parsley if desired. Serve warm.

Notes

  • Use store-bought frozen meatballs to save time, or make your own for extra flavor.
  • Make ahead and refrigerate overnight, then bake when ready to serve.
  • Add spinach or chopped veggies to the ricotta mixture for a nutritional boost.
