Description

The Mediterranean Steak Bowl is a wholesome, protein-packed meal featuring tender grilled steak, fresh vegetables, grains, and a zesty tzatziki or hummus drizzle. It’s vibrant, satisfying, and inspired by the flavors of the Mediterranean.


Ingredients

  • 1 lb flank steak or sirloin
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 2 cups cooked quinoa or brown rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup tzatziki or hummus, for topping

Instructions

  1. In a bowl, whisk together olive oil, garlic, lemon juice, oregano, salt, and pepper. Add steak and marinate for at least 30 minutes (or up to 4 hours).
  2. Heat a grill or skillet over medium-high heat. Cook steak 4–5 minutes per side (medium-rare to medium). Let rest 5 minutes, then slice thinly against the grain.
  3. In serving bowls, layer quinoa or rice as the base.
  4. Top each bowl with tomatoes, cucumber, red onion, olives, and feta cheese.
  5. Add sliced steak on top and drizzle with tzatziki or dollops of hummus.
  6. Garnish with fresh parsley and an extra squeeze of lemon if desired.

Notes

  • Substitute chicken or chickpeas for steak to make it lighter or vegetarian.
  • Use cauliflower rice for a low-carb option.
  • Prepare components in advance for easy meal prep.
  • Tzatziki adds freshness, but hummus or tahini works well too.
