- 1/2 cup butter, room temperature
- 1/4 cup sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips or chopped nuts
- 2 large egg whites
- 3/4 cup brown sugar
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9-inch baking pan.
- Cream together butter and sugar. Add in the yolk and vanilla.
- Mix in flour, baking powder, and salt. Spread batter evenly into prepared pan.
- Top batter with chocolate chips or chopped nuts.
- Beat the 2 egg whites until foamy, then gradually add brown sugar and continue beating until stiff peaks form.
- Spread meringue mixture evenly over batter.
- Bake for 25-30 minutes, until meringue is crispy and lightly browned.
- Remove from oven, cool, cut into squares, and serve.
Notes
- Add chopped pecans or almonds for texture.
- Chocolate chips can be replaced with butterscotch or toffee bits.
- Pair with a glass of milk or a warm cup of coffee.
