Description

Mud Hen Bars are a rich and sweet treat featuring a buttery base, a layer of chocolate or nuts, and a crispy meringue-like topping — perfect for a potluck or a family dessert!


Ingredients

  • 1/2 cup butter, room temperature
  • 1/4 cup sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chopped nuts
  • 2 large egg whites
  • 3/4 cup brown sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9-inch baking pan.
  2. Cream together butter and sugar. Add in the yolk and vanilla.
  3. Mix in flour, baking powder, and salt. Spread batter evenly into prepared pan.
  4. Top batter with chocolate chips or chopped nuts.
  5. Beat the 2 egg whites until foamy, then gradually add brown sugar and continue beating until stiff peaks form.
  6. Spread meringue mixture evenly over batter.
  7. Bake for 25-30 minutes, until meringue is crispy and lightly browned.
  8. Remove from oven, cool, cut into squares, and serve.

Notes

  • Add chopped pecans or almonds for texture.
  • Chocolate chips can be replaced with butterscotch or toffee bits.
