- 3 cups cremini or button mushrooms, sliced

- 1 1/2 cups dry orzo pasta
- 2 1/2 cups vegetable or chicken broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream (optional for extra creaminess)
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil and butter in a large skillet over medium heat. Add mushrooms and cook for 6–8 minutes until browned and softened.
- Stir in garlic and thyme, cooking for 1 minute until fragrant.
- Add the orzo and toast for 1–2 minutes, stirring frequently.
- Pour in the broth, salt, and pepper. Bring to a boil, then reduce heat to low and simmer uncovered for 10–12 minutes, stirring occasionally until the orzo is tender and most of the liquid is absorbed.
- Stir in the Parmesan cheese and heavy cream (if using) until creamy and well combined.
- Garnish with fresh parsley and serve warm.
