  • 2 tablespoons butter
  • 3 cups cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 1/2 cups dry orzo pasta
  • 2 1/2 cups vegetable or chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream (optional for extra creaminess)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil and butter in a large skillet over medium heat. Add mushrooms and cook for 6–8 minutes until browned and softened.
  2. Stir in garlic and thyme, cooking for 1 minute until fragrant.
  3. Add the orzo and toast for 1–2 minutes, stirring frequently.
  4. Pour in the broth, salt, and pepper. Bring to a boil, then reduce heat to low and simmer uncovered for 10–12 minutes, stirring occasionally until the orzo is tender and most of the liquid is absorbed.
  5. Stir in the Parmesan cheese and heavy cream (if using) until creamy and well combined.
  6. Garnish with fresh parsley and serve warm.
