- 1 large egg
- 1 teaspoon vanilla extract

- 1/2 cup nasturtium flowers, chopped (petals only)
- Optional: zest of 1 lemon
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together flour and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped nasturtium petals and lemon zest if using.
- Drop tablespoon-sized dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Use only the petals of nasturtium flowers as the leaves can be too peppery.
- For a more intense floral flavor, gently press a whole nasturtium flower on top of each cookie before baking.
- Store cookies in an airtight container for up to a week.
