Description

Creamy, rich peanut butter cheesecake bites with a graham cracker base, made without baking. Perfect for quick desserts or party treats.


Ingredients

  • 1 cup graham cracker crumbs
  • 2 tbsp melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 cup mini chocolate chips (optional)
  • Pinch of salt

Instructions

  1. In a small bowl, mix graham cracker crumbs and melted butter until combined.
  2. Press a spoonful of the mixture into mini muffin tins or silicone molds to form the crust. Set aside.
  3. In a separate bowl, beat cream cheese, peanut butter, powdered sugar, vanilla, and salt until smooth and creamy.
  4. Fold in mini chocolate chips if using.
  5. Spoon or pipe the filling over the crusts in the molds.
  6. Refrigerate for at least 2 hours, or until set.
  7. Pop out of molds and serve chilled.

  • Use a mini cookie scoop for uniform portions.
  • Freeze for longer storage—just let them thaw slightly before serving.
