Orange Juice Cake is a moist and flavorful Southern-style bundt cake made with boxed yellow cake mix, instant pudding, and a generous amount of fresh orange juice. - 1 box yellow cake mix (15.25 oz)
- 1 box instant vanilla pudding mix (3.4 oz)
- 3/4 cup orange juice (preferably fresh)
- 1/2 cup vegetable oil
- 4 large eggs
- 1 teaspoon orange zest (optional)
- 1/2 teaspoon vanilla extract
- For the glaze:
- 1/2 cup orange juice
- 1 cup powdered sugar
- 2 tablespoons unsalted butter, melted
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a bundt pan.
- In a large mixing bowl, combine cake mix, pudding mix, orange juice, oil, eggs, orange zest, and vanilla extract. Beat for 2 minutes until smooth and well blended.
- Pour the batter into the prepared bundt pan and smooth the top.
- Bake for 40–45 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the glaze by whisking together orange juice, powdered sugar, and melted butter until smooth.
- Remove the cake from the oven and let it cool in the pan for 10 minutes. Invert onto a wire rack.
- While the cake is still warm, poke holes all over with a skewer or toothpick and slowly pour the glaze over the top to soak in.
- Let the cake cool completely before slicing and serving.
Notes
- Fresh orange juice gives the best flavor, but bottled can be used in a pinch.
- Add a touch of orange extract to enhance the citrus flavor even more.
- This cake is even better the next day once the glaze has fully soaked in.
