- 500g baby potatoes, halved
- 250g smoked sausage, sliced
- 1 medium onion, sliced
- 1 red bell pepper, sliced (optional)
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 200°C (400°F).
- In a large bowl, combine potatoes, sausage, onion, and bell pepper if using.
- Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, salt, and pepper. Toss until well coated.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Roast for 30–35 minutes, stirring halfway through, until potatoes are golden and tender, and sausage is browned.
- Remove from oven and garnish with chopped parsley. Serve hot.
Notes
- Use baby potatoes or dice regular ones for quicker roasting.
- For extra crispiness, broil for the last 2–3 minutes.
- Try with different smoked sausages like kielbasa or andouille for variety.
