Description

Peanut Brittle is a classic hard candy made from caramelized sugar and roasted peanuts. It’s a crunchy, sweet treat perfect for holidays or as a homemade gift.


Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1 cup unsalted roasted peanuts
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. In a heavy-bottomed saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring constantly until the sugar dissolves.
  3. Attach a candy thermometer to the saucepan. Without stirring, allow the mixture to boil until it reaches 300°F (hard crack stage).
  4. Quickly stir in the peanuts, butter, vanilla extract, and salt. Mix until well combined.
  5. Remove from heat and immediately stir in the baking soda. The mixture will foam up slightly.
  6. Quickly pour the mixture onto the prepared baking sheet and spread it out evenly with a spatula.
  7. Allow to cool completely at room temperature, then break into pieces.

Notes

  • Work quickly when adding baking soda to prevent the mixture from hardening too soon.
  • You can use raw peanuts, but roast them beforehand for extra flavor.
  • Store in an airtight container to keep brittle crisp.
