Description
Peanut Brittle is a classic hard candy made from caramelized sugar and roasted peanuts. It’s a crunchy, sweet treat perfect for holidays or as a homemade gift.
Ingredients

- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 cup water
- 1 cup unsalted roasted peanuts
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
- In a heavy-bottomed saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring constantly until the sugar dissolves.
- Attach a candy thermometer to the saucepan. Without stirring, allow the mixture to boil until it reaches 300°F (hard crack stage).
- Quickly stir in the peanuts, butter, vanilla extract, and salt. Mix until well combined.
- Remove from heat and immediately stir in the baking soda. The mixture will foam up slightly.
- Quickly pour the mixture onto the prepared baking sheet and spread it out evenly with a spatula.
- Allow to cool completely at room temperature, then break into pieces.
Notes
- Work quickly when adding baking soda to prevent the mixture from hardening too soon.
- You can use raw peanuts, but roast them beforehand for extra flavor.
- Store in an airtight container to keep brittle crisp.
