- For the Donuts:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 cup milk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- For the Peanut Butter Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/2 cup peanut butter
- 1/4 cup powdered sugar
- 1/4 teaspoon vanilla extract
- For the Peanut Butter Glaze:
- 1/2 cup powdered sugar
- 2 tablespoons peanut butter
- 2–3 tablespoons milk (to achieve desired consistency)
- 1/4 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a donut pan and set aside.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract.
- Combine the wet ingredients with the dry ingredients, stirring until just combined. Be careful not to overmix.
- Fill each donut mold about 2/3 full with the batter. Bake for 12-15 minutes or until a toothpick comes out clean. Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- While the donuts cool, prepare the peanut butter cheesecake filling by beating the cream cheese, peanut butter, powdered sugar, and vanilla extract together until smooth and creamy.
- Once the donuts are completely cooled, cut a small hole in the center of each donut and fill it with the peanut butter cheesecake filling using a piping bag or a spoon.
- For the glaze, whisk together powdered sugar, peanut butter, milk, and vanilla extract until smooth. Drizzle the glaze over the filled donuts.
- Serve immediately and enjoy!
Notes
- For an extra peanut butter flavor, add chopped peanuts on top of the glaze.
- These donuts are best served fresh but can be stored in an airtight container for up to 2 days.
- For a chocolate twist, drizzle some melted chocolate over the glaze.
