Description

Perfect Berry Shortcakes are a delightful dessert made with buttery, flaky biscuits, sweetened whipped cream, and juicy fresh berries — a classic treat that’s light, fruity, and perfect for summer.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 2/3 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 large egg, beaten (for brushing)
  • 2 tablespoons coarse sugar (optional, for topping)
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries or raspberries
  • 1/4 cup sugar (for macerating berries)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the butter with a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Stir in milk and vanilla until just combined. Do not overmix.
  5. Drop 6 portions of dough onto the baking sheet. Brush tops with beaten egg and sprinkle with coarse sugar if desired.
  6. Bake for 12–15 minutes or until golden brown. Let cool on a wire rack.
  7. Meanwhile, combine strawberries, blueberries, and sugar in a bowl. Let sit for at least 15 minutes to release juices.
  8. In another bowl, whip heavy cream with powdered sugar and vanilla until soft peaks form.
  9. Slice shortcakes in half. Spoon berries and juices over the bottom half, add whipped cream, then top with the other half.
  10. Serve immediately and enjoy!

Notes

  • You can prepare the shortcakes ahead and rewarm them slightly before assembling.
  • Mix and match any fresh berries you like.
  • For extra richness, add a spoonful of mascarpone or cream cheese to the whipped cream.
