- 2 large eggs

- 1 cup pineapple juice (fresh or canned)
- 1/2 cup crushed pineapple, drained
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in vanilla extract.
- Alternately add the dry ingredients and pineapple juice to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
- Fold in crushed pineapple gently.
- Pour batter into prepared pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Allow cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- Drain crushed pineapple well to avoid excess moisture.
- For extra flavor, top with whipped cream or pineapple glaze.
- Store cake covered at room temperature for up to 3 days.
