Description

Pizza Enchiladas combine the cheesy, savory flavors of classic pizza with the comfort and warmth of enchiladas. Rolled tortillas filled with pepperoni, sausage, cheese, and pizza sauce make for a fun and easy fusion dinner.


Ingredients

  • 8 flour tortillas (8-inch size)
  • 1 1/2 cups pizza sauce (plus extra for topping)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup mini pepperoni slices
  • 1/2 cup cooked Italian sausage, crumbled
  • 1/4 cup diced green bell pepper (optional)
  • 1/4 cup sliced black olives (optional)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Extra cheese and toppings for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a mixing bowl, combine pizza sauce, cooked sausage, pepperoni, mozzarella, cheddar, green bell pepper, olives, Italian seasoning, salt, and pepper.
  3. Spoon 2–3 tablespoons of filling into each tortilla. Roll tightly and place seam-side down in the prepared baking dish.
  4. Pour additional pizza sauce over the top of the enchiladas and sprinkle with extra cheese and toppings if desired.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 5–10 minutes until bubbly and golden.
  6. Let cool slightly before serving. Garnish with fresh herbs if desired.

Notes

  • Swap flour tortillas with low-carb or gluten-free ones if needed.
  • Use any pizza toppings you like — mushrooms, onions, jalapeños, etc.
  • Add red pepper flakes or hot sauce for extra heat.
  • Serve with a side salad or garlic bread for a complete meal.
