Description

Preserved Lemon Roasted Chicken is a rich and tangy twist on a classic roast chicken, infused with the deep, citrusy flavor of preserved lemons and aromatic herbs — perfect for a special dinner!


Ingredients

  • 1 whole chicken (about 34 lbs)
  • 2 preserved lemons, quartered
  • 4 sprigs rosemary
  • 4 sprigs thyme
  • 4 cloves garlic, crushed
  • 1 lemon, cut in half
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Remove giblets from chicken and pat it dry with paper towels.
  3. Stuff chicken with preserved lemons, herbs, garlic, and lemon halves.
  4. Rub skin all over with olive oil, paprika, and a generous amount of salt and black pepper.
  5. Place chicken in a roasting pan and roast for 1-1.5 hours, or until internal temperature reaches 165°F (74°C).
  6. Remove from oven and let rest for 10 minutes before carving and serving.

Notes

  • Pair with roast veggies or couscous for a complete meal.
  • If you don’t have preserved lemons, you can use lemon zest and juice instead.
