- 1 whole chicken (about 3–4 lbs)
- 2 preserved lemons, quartered
- 4 sprigs rosemary
- 4 sprigs thyme
- 4 cloves garlic, crushed
- 1 lemon, cut in half
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Remove giblets from chicken and pat it dry with paper towels.
- Stuff chicken with preserved lemons, herbs, garlic, and lemon halves.
- Rub skin all over with olive oil, paprika, and a generous amount of salt and black pepper.
- Place chicken in a roasting pan and roast for 1-1.5 hours, or until internal temperature reaches 165°F (74°C).
- Remove from oven and let rest for 10 minutes before carving and serving.
Notes
- Pair with roast veggies or couscous for a complete meal.
- If you don’t have preserved lemons, you can use lemon zest and juice instead.
- Basting the chicken halfway through cooking can help keep it moist.
