Quick & Easy Coconut Chocolate Bars are rich, chewy no-bake treats made with sweetened shredded coconut and topped with a smooth chocolate layer. They come together fast and satisfy any sweet craving!

- 3 cups sweetened shredded coconut
- 1 cup sweetened condensed milk
- 1/2 tsp vanilla extract
- 1 1/2 cups semi-sweet chocolate chips
- 1 tbsp coconut oil or butter
Instructions
- Line an 8×8-inch baking dish with parchment paper.
- In a mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract. Stir until evenly combined.
- Press the coconut mixture firmly and evenly into the prepared pan.
- In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring in between until smooth.
- Pour the melted chocolate over the coconut layer and spread evenly with a spatula.
- Refrigerate for at least 2 hours, or until set.
- Once firm, lift the bars out of the pan and cut into squares.
Notes
- Use dark chocolate for a less sweet version.
- Add a pinch of sea salt on top before chilling for contrast.
- Store in the fridge for up to 1 week or freeze for longer storage.
