- 1 small onion, chopped
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
- 1 (1 oz) packet taco seasoning
- 1 (1 oz) packet ranch dressing mix
- 2 cups beef broth or water
- Salt and pepper, to taste
Instructions
- In a large pot or Dutch oven, cook the ground beef and chopped onion over medium heat until browned and cooked through. Drain any excess grease.
- Add black beans, pinto beans, corn, diced tomatoes with green chilies, taco seasoning, ranch mix, and beef broth.
- Stir well to combine. Bring to a boil, then reduce heat and simmer uncovered for 15–20 minutes, stirring occasionally.
- Taste and adjust seasoning with salt and pepper if needed.
- Serve hot with shredded cheese, sour cream, green onions, or tortilla chips.
