This Raspberry Tiramisu Delight is a fruity twist on the classic Italian dessert, layered with creamy mascarpone filling, fresh raspberries, and coffee-soaked ladyfingers for a refreshing and elegant treat.

- 1 1/2 cups fresh raspberries (plus extra for garnish)
- 1 cup raspberry preserves or jam
- 1 cup strong brewed coffee or espresso, cooled
- 2 tbsp raspberry liqueur (optional)
- 24 ladyfinger cookies
- 1 1/2 cups mascarpone cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp cocoa powder, for dusting
Instructions
- In a shallow dish, combine the cooled coffee and raspberry liqueur if using.
- In a large bowl, beat mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture.
- Dip each ladyfinger briefly into the coffee mixture and arrange a single layer in the bottom of a baking dish.
- Spread half the mascarpone mixture over the ladyfingers, then top with half the raspberry preserves and fresh raspberries.
- Repeat with remaining ladyfingers, mascarpone mixture, raspberry preserves, and raspberries.
- Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld.
- Before serving, dust with cocoa powder and garnish with extra raspberries.
Notes
- For a non-alcoholic version, omit the raspberry liqueur and use extra coffee or raspberry juice.
- This dessert is best made a day in advance to allow the layers to set.
- You can substitute strawberries or blueberries for a different berry variation.
