- 1 lb (450g) sirloin or flank steak, thinly sliced
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 1/2 cups milk or heavy cream
- 1/2 cup honey BBQ sauce
- 8 oz (225g) penne or rotini pasta (uncooked)
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot or deep skillet over medium-high heat. Add steak slices and cook until browned. Remove and set aside.
- In the same pot, add diced onion and cook for 3–4 minutes until soft. Stir in garlic and cook for 1 minute.
- Add beef broth, milk (or cream), honey BBQ sauce, uncooked pasta, smoked paprika, chili powder, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat to a simmer. Cover and cook for 10–12 minutes, stirring occasionally, until pasta is tender and sauce is slightly thickened.
- Return the cooked steak to the pot and stir in shredded cheddar cheese until melted and creamy.
- Garnish with chopped parsley and serve hot straight from the pot.
Notes
- For extra richness, add a tablespoon of butter when adding the steak back in.
- Adjust the BBQ sauce amount for more or less sweetness.
- Use a good-quality steak for best flavor and texture.
- This dish reheats well, making it great for leftovers.
