Ingredients

  • 1 pound ground beef or a mix of beef and pork
  • 1/2 cup breadcrumbs
  • 1 egg
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup ricotta cheese
  • 2 tablespoons olive oil
  • 2 cups marinara sauce

Instructions

  1. In a bowl, combine the ground meat, breadcrumbs, egg, garlic, Parmesan cheese, lemon zest, salt, pepper, oregano, and red pepper flakes (if using). Mix until just combined.
  2. Form small meatballs, placing 1/2 teaspoon of ricotta cheese in the center of each and sealing the meat around it completely.
  3. Heat olive oil in a large skillet over medium heat. Brown the meatballs for 5–6 minutes, turning occasionally, until golden on all sides.
  4. Pour in the marinara sauce, cover, and simmer for 15–20 minutes until the meatballs are fully cooked through.
  5. Garnish with extra Parmesan and lemon zest before serving.
