Juicy turkey meatballs made with creamy ricotta and fresh lemon zest, paired with a tangy herb yogurt dip for a fresh and satisfying meal or appetizer.

- 1 lb ground turkey
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 tbsp lemon zest
- 2 tbsp fresh lemon juice
- 1/4 cup breadcrumbs
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup plain Greek yogurt
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp olive oil (for dip)
- 1 tsp lemon juice (for dip)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground turkey, ricotta, Parmesan, egg, garlic, lemon zest, lemon juice, breadcrumbs, salt, and pepper. Mix gently until combined.
- Form mixture into meatballs and place on the prepared baking sheet.
- Brush or drizzle olive oil over the meatballs and bake for 18-20 minutes until cooked through and golden.
- Meanwhile, prepare the herb yogurt dip by combining Greek yogurt, dill, parsley, olive oil, lemon juice, salt, and pepper in a small bowl. Mix well and chill until ready to serve.
- Serve the meatballs warm with the herb yogurt dip on the side.
Notes
- Use ground chicken instead of turkey if preferred.
- For extra flavor, add a pinch of red pepper flakes to the meatball mixture.
- The dip can be made a day in advance and stored in the fridge.
