Description

Juicy turkey meatballs made with creamy ricotta and fresh lemon zest, paired with a tangy herb yogurt dip for a fresh and satisfying meal or appetizer.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1/4 cup breadcrumbs
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup plain Greek yogurt
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil (for dip)
  • 1 tsp lemon juice (for dip)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, ricotta, Parmesan, egg, garlic, lemon zest, lemon juice, breadcrumbs, salt, and pepper. Mix gently until combined.
  3. Form mixture into meatballs and place on the prepared baking sheet.
  4. Brush or drizzle olive oil over the meatballs and bake for 18-20 minutes until cooked through and golden.
  5. Meanwhile, prepare the herb yogurt dip by combining Greek yogurt, dill, parsley, olive oil, lemon juice, salt, and pepper in a small bowl. Mix well and chill until ready to serve.
  6. Serve the meatballs warm with the herb yogurt dip on the side.

Notes

  • Use ground chicken instead of turkey if preferred.
  • For extra flavor, add a pinch of red pepper flakes to the meatball mixture.
  • The dip can be made a day in advance and stored in the fridge.
