Salted Caramel Panna Cotta with Praline is a rich and creamy Italian dessert infused with deep caramel flavor and topped with crunchy nut praline for contrast. It’s an elegant, make-ahead treat perfect for dinner parties.

- 2 cups heavy cream
- 1/2 cup whole milk
- 1/2 cup granulated sugar
- 1/4 cup water
- 1 teaspoon sea salt
- 1 teaspoon vanilla extract
- 2 teaspoons powdered gelatin
- 2 tablespoons cold water (for blooming gelatin)
- For the praline: 1/2 cup granulated sugar, 1/3 cup chopped nuts (almonds or hazelnuts), pinch of salt
Instructions
- In a small bowl, sprinkle gelatin over 2 tablespoons of cold water and let it bloom for 5–10 minutes.
- In a saucepan, add 1/2 cup sugar and 1/4 cup water. Heat over medium heat until it turns a deep amber caramel color without stirring.
- Carefully add cream, milk, and salt to the caramel (it will bubble vigorously). Stir until smooth.
- Remove from heat and stir in vanilla extract and bloomed gelatin until completely dissolved.
- Pour mixture into serving glasses or ramekins. Chill in the fridge for at least 4 hours, or until set.
- For the praline, melt 1/2 cup sugar in a dry pan over medium heat until golden. Stir in chopped nuts and a pinch of salt. Pour onto parchment paper and let harden, then break into shards.
- Top the panna cotta with praline shards just before serving.
Notes
- Use high-quality sea salt for the best salted caramel flavor.
- The praline can be made ahead and stored in an airtight container.
- To unmold panna cotta, briefly dip the ramekins in warm water and invert onto a plate.
