Description

Salted Caramel Panna Cotta with Praline is a rich and creamy Italian dessert infused with deep caramel flavor and topped with crunchy nut praline for contrast. It’s an elegant, make-ahead treat perfect for dinner parties.


Ingredients

  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 1 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 2 teaspoons powdered gelatin
  • 2 tablespoons cold water (for blooming gelatin)
  • For the praline: 1/2 cup granulated sugar, 1/3 cup chopped nuts (almonds or hazelnuts), pinch of salt

Instructions

  1. In a small bowl, sprinkle gelatin over 2 tablespoons of cold water and let it bloom for 5–10 minutes.
  2. In a saucepan, add 1/2 cup sugar and 1/4 cup water. Heat over medium heat until it turns a deep amber caramel color without stirring.
  3. Carefully add cream, milk, and salt to the caramel (it will bubble vigorously). Stir until smooth.
  4. Remove from heat and stir in vanilla extract and bloomed gelatin until completely dissolved.
  5. Pour mixture into serving glasses or ramekins. Chill in the fridge for at least 4 hours, or until set.
  6. For the praline, melt 1/2 cup sugar in a dry pan over medium heat until golden. Stir in chopped nuts and a pinch of salt. Pour onto parchment paper and let harden, then break into shards.
  7. Top the panna cotta with praline shards just before serving.

Notes

  • Use high-quality sea salt for the best salted caramel flavor.
  • The praline can be made ahead and stored in an airtight container.
  • To unmold panna cotta, briefly dip the ramekins in warm water and invert onto a plate.
