Description

Samoa Rice Krispie Treats are a fun, no-bake twist on the classic Girl Scout cookie. They feature crispy rice cereal, melted caramel, toasted coconut, and a drizzle of chocolate for a delicious, sweet treat.

  • 3 tablespoons unsalted butter
  • 10 oz (280g) bag of mini marshmallows
  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1 1/2 cups sweetened shredded coconut, toasted
  • 1/2 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil (for chocolate drizzle)

Instructions

  1. Start by toasting the shredded coconut in a dry skillet over medium heat, stirring frequently until golden brown, about 4-5 minutes. Set aside to cool.
  2. In a large saucepan, melt butter over medium heat. Add marshmallows and stir until completely melted and smooth.
  3. Remove from heat and stir in caramel sauce. Immediately add Rice Krispies cereal and stir until well coated.
  4. Fold in the toasted coconut, reserving a handful for topping the treats.
  5. Press the mixture into a greased 9×9-inch baking dish, pressing down firmly to ensure it sticks together.
  6. In a microwave-safe bowl, melt the chocolate chips with vegetable oil, stirring every 20 seconds until smooth and melted.
  7. Drizzle the melted chocolate over the Rice Krispie treats and sprinkle the remaining toasted coconut on top.
  8. Let the treats cool completely before cutting into squares and serving.
