- 10 oz (280g) bag of mini marshmallows
- 1/2 cup caramel sauce (store-bought or homemade)
- 1 1/2 cups sweetened shredded coconut, toasted
- 1/2 cup semi-sweet chocolate chips
- 1 tablespoon vegetable oil (for chocolate drizzle)
Instructions
- Start by toasting the shredded coconut in a dry skillet over medium heat, stirring frequently until golden brown, about 4-5 minutes. Set aside to cool.
- In a large saucepan, melt butter over medium heat. Add marshmallows and stir until completely melted and smooth.
- Remove from heat and stir in caramel sauce. Immediately add Rice Krispies cereal and stir until well coated.
- Fold in the toasted coconut, reserving a handful for topping the treats.
- Press the mixture into a greased 9×9-inch baking dish, pressing down firmly to ensure it sticks together.
- In a microwave-safe bowl, melt the chocolate chips with vegetable oil, stirring every 20 seconds until smooth and melted.
- Drizzle the melted chocolate over the Rice Krispie treats and sprinkle the remaining toasted coconut on top.
- Let the treats cool completely before cutting into squares and serving.
Notes
- For a smoother chocolate drizzle, use a higher-quality chocolate.
- If you prefer a thicker layer of chocolate, double the amount of chocolate chips.
- Make sure the coconut is evenly toasted for the best texture and flavor.
