Description

This Sausage, Beef, Kale & Cherry Tomato Orzo is a hearty one-pan meal loaded with flavor. Tender orzo is cooked with savory sausage and ground beef, fresh kale, and juicy cherry tomatoes for a comforting, family-friendly dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1/2 pound Italian sausage, casing removed
  • 1/2 pound ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups dry orzo pasta
  • 2 1/2 cups chicken or beef broth
  • 1 cup cherry tomatoes, halved
  • 2 cups kale, chopped and stems removed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh basil or parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sausage and ground beef, cooking for 5–6 minutes while breaking it up with a spoon until browned.
  2. Add onion and garlic, cooking for another 2–3 minutes until fragrant.
  3. Stir in the orzo and toast for 1–2 minutes, then add the broth. Bring to a boil, reduce heat, and simmer uncovered for 10 minutes, stirring occasionally.
  4. Add the cherry tomatoes and kale, cooking for 3–4 minutes until the orzo is tender and the kale is wilted.
  5. Season with salt, pepper, and red pepper flakes if using. Stir in Parmesan cheese and garnish with fresh basil or parsley before serving.

Notes

  • Use spicy Italian sausage for an extra kick of flavor.
  • Spinach can be used instead of kale if preferred.
  • Add more broth if you prefer a saucier consistency.
