- 1 tablespoon olive oil
- 1/2 pound Italian sausage, casing removed
- 1/2 pound ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 1/2 cups dry orzo pasta
- 2 1/2 cups chicken or beef broth
- 1 cup cherry tomatoes, halved
- 2 cups kale, chopped and stems removed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh basil or parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat. Add the sausage and ground beef, cooking for 5–6 minutes while breaking it up with a spoon until browned.
- Add onion and garlic, cooking for another 2–3 minutes until fragrant.
- Stir in the orzo and toast for 1–2 minutes, then add the broth. Bring to a boil, reduce heat, and simmer uncovered for 10 minutes, stirring occasionally.
- Add the cherry tomatoes and kale, cooking for 3–4 minutes until the orzo is tender and the kale is wilted.
- Season with salt, pepper, and red pepper flakes if using. Stir in Parmesan cheese and garnish with fresh basil or parsley before serving.
Notes
- Use spicy Italian sausage for an extra kick of flavor.
- Spinach can be used instead of kale if preferred.
- Add more broth if you prefer a saucier consistency.
