Description
This hearty and flavorful dish combines sautéed sausage, sweet bell peppers, onions, and tomatoes over a bed of rice. It’s an easy, colorful, and satisfying one-pan meal perfect for busy weeknights.

- 1 lb smoked sausage or kielbasa, sliced into rounds
- 1 tbsp olive oil
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 cloves garlic, minced
- 1/2 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste
- 2 cups cooked white or brown rice
- Fresh parsley, for garnish (optional)
Instructions
- In a large skillet or sauté pan, heat olive oil over medium heat.
- Add sliced sausage and cook until browned, about 5–6 minutes. Remove and set aside.
- In the same skillet, add onions and bell peppers. Sauté until softened, about 5 minutes.
- Add minced garlic and cook for another 30 seconds until fragrant.
- Return sausage to the pan and add the diced tomatoes with their juices.
- Season with oregano, smoked paprika, salt, and pepper. Stir to combine.
- Simmer uncovered for 10–12 minutes, stirring occasionally, until flavors meld and mixture thickens slightly.
- Serve hot over cooked rice and garnish with fresh parsley if desired.
Notes
- Use andouille sausage for a spicier kick.
- Add crushed red pepper flakes for extra heat.
- This dish reheats well and makes great leftovers.
