Description

This hearty and flavorful dish combines sautéed sausage, sweet bell peppers, onions, and tomatoes over a bed of rice. It’s an easy, colorful, and satisfying one-pan meal perfect for busy weeknights.


Ingredients

  • 1 lb smoked sausage or kielbasa, sliced into rounds
  • 1 tbsp olive oil
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 cups cooked white or brown rice
  • Fresh parsley, for garnish (optional)

Instructions

  1. In a large skillet or sauté pan, heat olive oil over medium heat.
  2. Add sliced sausage and cook until browned, about 5–6 minutes. Remove and set aside.
  3. In the same skillet, add onions and bell peppers. Sauté until softened, about 5 minutes.
  4. Add minced garlic and cook for another 30 seconds until fragrant.
  5. Return sausage to the pan and add the diced tomatoes with their juices.
  6. Season with oregano, smoked paprika, salt, and pepper. Stir to combine.
  7. Simmer uncovered for 10–12 minutes, stirring occasionally, until flavors meld and mixture thickens slightly.
  8. Serve hot over cooked rice and garnish with fresh parsley if desired.

Notes

  • Use andouille sausage for a spicier kick.
  • Add crushed red pepper flakes for extra heat.
  • This dish reheats well and makes great leftovers.
