Description

Simple Pineapple Carrot Oat Bread is a moist, wholesome quick bread made with grated carrots, crushed pineapple, and oats. Naturally sweet and full of texture, it’s perfect for breakfast, snacking, or even a healthy dessert.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 large eggs
  • 1/3 cup vegetable oil (or melted coconut oil)
  • 1/3 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 cup grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, oats, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, beat the eggs, oil, honey or maple syrup, and vanilla until well combined.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Fold in grated carrots, crushed pineapple, and nuts (if using).
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra flavor, add a handful of shredded coconut or raisins.
  • This bread stores well in the fridge for up to 5 days or can be frozen for up to 3 months.
  • Use whole wheat flour for a more nutritious version.
