Description
Simple Pineapple Carrot Oat Bread is a moist, wholesome quick bread made with grated carrots, crushed pineapple, and oats. Naturally sweet and full of texture, it’s perfect for breakfast, snacking, or even a healthy dessert.

- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 large eggs
- 1/3 cup vegetable oil (or melted coconut oil)
- 1/3 cup honey or maple syrup
- 1 tsp vanilla extract
- 1 cup grated carrots
- 1/2 cup crushed pineapple, drained
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together flour, oats, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat the eggs, oil, honey or maple syrup, and vanilla until well combined.
- Stir the wet ingredients into the dry ingredients until just combined.
- Fold in grated carrots, crushed pineapple, and nuts (if using).
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra flavor, add a handful of shredded coconut or raisins.
- This bread stores well in the fridge for up to 5 days or can be frozen for up to 3 months.
- Use whole wheat flour for a more nutritious version.
