- 1 lb beef stew meat, cut into cubes
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 2 carrots, sliced
- 1 zucchini, sliced
- 1 cup corn kernels (fresh or frozen)
- 1 can (14.5 oz) diced tomatoes
- 1/2 cup beef broth
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Brown the beef stew meat in batches, then transfer to a slow cooker.
- In the same skillet, sauté onion and garlic for 2-3 minutes until softened.
- Add the onion and garlic to the slow cooker, along with potatoes, carrots, zucchini, corn, diced tomatoes, beef broth, oregano, paprika, salt, and pepper.
- Stir everything together, cover, and cook on low for 6–8 hours or until the beef is tender and vegetables are cooked through.
- Once cooked, garnish with fresh parsley before serving.
Notes
- Add other seasonal vegetables like bell peppers or green beans for extra flavor.
- If you prefer a thicker sauce, mix 1 tbsp cornstarch with 2 tbsp cold water and stir it into the casserole 30 minutes before the end of cooking.
- This casserole pairs well with a side of crusty bread or rice.
