- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 3 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped (for garnish)
- 1 tbsp butter (optional, for added richness)
Instructions
- Place the chicken breasts in the bottom of the slow cooker.
- In a small bowl, whisk together the chicken broth, heavy cream, lemon juice, lemon zest, garlic, thyme, oregano, salt, and pepper.
- Pour the mixture over the chicken breasts in the slow cooker.
- Cover and cook on low for 4-6 hours, or until the chicken is tender and fully cooked through (internal temperature should reach 165°F or 75°C).
- Optional: About 30 minutes before the chicken is done, add 1 tablespoon of butter to the slow cooker for extra creaminess.
- Once the chicken is cooked, remove it from the slow cooker and set aside. Stir the creamy sauce in the slow cooker to combine.
- Serve the chicken with the creamy sauce over rice, pasta, or vegetables. Garnish with fresh parsley before serving.
Notes
- For a thicker sauce, you can mix a little cornstarch with water and stir it into the sauce before serving.
- If you prefer a tangier flavor, add more lemon juice or zest to taste.
- This dish pairs well with mashed potatoes, steamed vegetables, or a side salad.
