- 1 tablespoon olive oil
- 14 ounces smoked sausage, sliced into rounds
- 1 large onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 red bell pepper, diced
- 3 cups chicken broth
- 1 can (28 oz) baked beans in tomato sauce
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/4 teaspoon black pepper
- Salt, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add smoked sausage slices and cook until lightly browned on both sides, about 4–5 minutes. Remove and set aside.
- In the same pot, sauté onion, garlic, carrots, celery, and red bell pepper for 5–6 minutes until softened.
- Return the sausage to the pot. Add chicken broth, baked beans, cannellini beans, diced tomatoes, smoked paprika, thyme, and black pepper. Stir well.
- Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, stirring occasionally.
- Taste and adjust seasoning with salt if needed.
- Serve hot, garnished with fresh parsley and crusty bread on the side.
Notes
- For extra smokiness, use kielbasa or andouille sausage.
- This soup freezes well—cool completely before freezing in airtight containers.
- Add chopped spinach or kale in the last 5 minutes of cooking for extra nutrients.
- For a thicker texture, mash a portion of the beans before adding to the pot.
