Description

A hearty and flavorful soup made with smoky sausage, tender beans, and savory vegetables simmered in a rich tomato broth. Perfect for cozy dinners or chilly days.


Ingredients

  • 1 tablespoon olive oil
  • 14 ounces smoked sausage, sliced into rounds
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 3 cups chicken broth
  • 1 can (28 oz) baked beans in tomato sauce
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add smoked sausage slices and cook until lightly browned on both sides, about 4–5 minutes. Remove and set aside.
  2. In the same pot, sauté onion, garlic, carrots, celery, and red bell pepper for 5–6 minutes until softened.
  3. Return the sausage to the pot. Add chicken broth, baked beans, cannellini beans, diced tomatoes, smoked paprika, thyme, and black pepper. Stir well.
  4. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, stirring occasionally.
  5. Taste and adjust seasoning with salt if needed.
  6. Serve hot, garnished with fresh parsley and crusty bread on the side.

Notes

  • For extra smokiness, use kielbasa or andouille sausage.
  • This soup freezes well—cool completely before freezing in airtight containers.
  • Add chopped spinach or kale in the last 5 minutes of cooking for extra nutrients.
  • For a thicker texture, mash a portion of the beans before adding to the pot.
