Description

Snickerdoodle Cobbler is a warm, gooey dessert that brings the classic cinnamon-sugar flavor of snickerdoodle cookies into a luscious baked cobbler form. With a soft cookie-like topping and a sweet cinnamon sauce underneath, it’s perfect with a scoop of vanilla ice cream.


Ingredients

  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup light brown sugar, packed
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 cups hot water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Pour melted butter into the bottom of an 8×8-inch or 9×9-inch baking dish.
  3. In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt. Stir in milk and vanilla until smooth.
  4. Gently pour the batter over the melted butter in the baking dish — do not stir.
  5. In a separate bowl, mix brown sugar and cinnamon, then sprinkle evenly over the batter — again, do not stir.
  6. Carefully pour the hot water over the top of everything. Do not stir.
  7. Bake for 40–45 minutes, or until the top is golden and set and the bottom is bubbling.
  8. Let cool slightly before serving. Serve warm with a scoop of vanilla ice cream if desired.

Notes

  • Don’t stir the layers — the magic happens as it bakes!
  • Try adding chopped pecans for a nutty crunch.
  • Use a clear baking dish to watch the bubbling action underneath.
  • Great served fresh, but leftovers reheat beautifully in the microwave.
