Description
Snickerdoodle Cobbler is a warm, gooey dessert that brings the classic cinnamon-sugar flavor of snickerdoodle cookies into a luscious baked cobbler form. With a soft cookie-like topping and a sweet cinnamon sauce underneath, it’s perfect with a scoop of vanilla ice cream.

- 1/2 cup (1 stick) unsalted butter, melted
- 1 1/4 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup light brown sugar, packed
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 cups hot water
Instructions
- Preheat oven to 350°F (175°C).
- Pour melted butter into the bottom of an 8×8-inch or 9×9-inch baking dish.
- In a medium bowl, whisk together flour, granulated sugar, baking powder, and salt. Stir in milk and vanilla until smooth.
- Gently pour the batter over the melted butter in the baking dish — do not stir.
- In a separate bowl, mix brown sugar and cinnamon, then sprinkle evenly over the batter — again, do not stir.
- Carefully pour the hot water over the top of everything. Do not stir.
- Bake for 40–45 minutes, or until the top is golden and set and the bottom is bubbling.
- Let cool slightly before serving. Serve warm with a scoop of vanilla ice cream if desired.
Notes
- Don’t stir the layers — the magic happens as it bakes!
- Try adding chopped pecans for a nutty crunch.
- Use a clear baking dish to watch the bubbling action underneath.
- Great served fresh, but leftovers reheat beautifully in the microwave.
