- 1 cup chopped pecans (toasted if desired)
- 1 cup buttermilk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- Whisk together flour, sugar, baking powder, baking soda, and salt.
- Stir in chopped pecans.
- In another bowl, combine buttermilk, melted butter, eggs, and vanilla.
- Fold wet ingredients into dry until just combined.
- Pour batter into loaf pan and smooth the top.
- Bake for 50–60 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to wire rack to cool completely.
Notes
- Toast pecans for deeper flavor.
- Don’t overmix to keep loaf tender.
