Description

Southwest BBQ Summer Salad is a vibrant and flavorful salad featuring fresh summer vegetables, black beans, corn, and grilled chicken tossed in a zesty BBQ dressing. Perfect for a light, healthy meal with a southwestern twist.

  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen, thawed)
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 cups mixed salad greens
  • For the dressing:
  • 1/4 cup BBQ sauce
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon ground cumin

Instructions

  1. In a large bowl, combine grilled chicken, black beans, corn, bell pepper, cherry tomatoes, red onion, avocado, cilantro, and mixed greens.
  2. In a small bowl, whisk together BBQ sauce, olive oil, lime juice, honey, cumin, salt, and pepper until smooth.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately or refrigerate for up to 2 hours to let flavors meld.
