- 4 slices gluten-free bread
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup cream cheese, softened
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Butter, for spreading on bread
Instructions
- In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
- Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
- In a bowl, mix spinach, feta, mozzarella, cream cheese, salt, and pepper until well combined.
- Butter one side of each gluten-free bread slice.
- Place two slices butter-side-down on a skillet over medium heat.
- Spread the spinach and cheese mixture evenly over the bread slices in the skillet.
- Top with the remaining bread slices, butter-side-up.
- Cook for 3-4 minutes per side or until bread is golden brown and cheese is melted.
- Remove from skillet, slice, and serve warm.
