Description

Spanakopita Cheese Melt (Gluten-Free) is a delicious, savory gluten-free sandwich inspired by traditional Greek spinach pie, filled with a blend of spinach, feta, and melted cheese for a comforting and flavorful meal.


Ingredients

  • 4 slices gluten-free bread
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Butter, for spreading on bread

Instructions

  1. In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  2. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  3. In a bowl, mix spinach, feta, mozzarella, cream cheese, salt, and pepper until well combined.
  4. Butter one side of each gluten-free bread slice.
  5. Place two slices butter-side-down on a skillet over medium heat.
  6. Spread the spinach and cheese mixture evenly over the bread slices in the skillet.
  7. Top with the remaining bread slices, butter-side-up.
  8. Cook for 3-4 minutes per side or until bread is golden brown and cheese is melted.
  9. Remove from skillet, slice, and serve warm.
