Spinach & Artichoke Dip Pasta with Chicken combines the creamy, cheesy flavors of a classic appetizer with hearty pasta and juicy chicken for a rich and satisfying main course.

- 12 oz pasta (penne or rotini)
- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 1 (14 oz) can artichoke hearts, drained and chopped
- 3 cups fresh spinach, chopped
- 1/2 teaspoon red pepper flakes (optional)
- 4 oz cream cheese
- 1/2 cup sour cream
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup milk (or more as needed)
Instructions
- Cook pasta according to package instructions until al dente. Drain and set aside.
- Meanwhile, heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 5–7 minutes. Remove and set aside.
- In the same skillet, add garlic and cook until fragrant, about 1 minute.
- Add chopped artichokes, spinach, and red pepper flakes (if using). Cook until spinach is wilted.
- Reduce heat to low and stir in cream cheese, sour cream, Parmesan, and mozzarella until melted and creamy.
- Slowly add milk to loosen the sauce to desired consistency.
- Return chicken and cooked pasta to the skillet. Stir until everything is well combined and heated through.
- Serve warm with extra Parmesan on top if desired.
Notes
- Use rotisserie chicken for a quick shortcut.
- Add a squeeze of lemon juice for brightness.
- Great with whole wheat pasta or gluten-free options.
