Description

Spinach & Artichoke Dip Pasta with Chicken combines the creamy, cheesy flavors of a classic appetizer with hearty pasta and juicy chicken for a rich and satisfying main course.


Ingredients

  • 12 oz pasta (penne or rotini)
  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 (14 oz) can artichoke hearts, drained and chopped
  • 3 cups fresh spinach, chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 oz cream cheese
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup milk (or more as needed)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Meanwhile, heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 5–7 minutes. Remove and set aside.
  3. In the same skillet, add garlic and cook until fragrant, about 1 minute.
  4. Add chopped artichokes, spinach, and red pepper flakes (if using). Cook until spinach is wilted.
  5. Reduce heat to low and stir in cream cheese, sour cream, Parmesan, and mozzarella until melted and creamy.
  6. Slowly add milk to loosen the sauce to desired consistency.
  7. Return chicken and cooked pasta to the skillet. Stir until everything is well combined and heated through.
  8. Serve warm with extra Parmesan on top if desired.

Notes

  • Use rotisserie chicken for a quick shortcut.
  • Add a squeeze of lemon juice for brightness.
  • Great with whole wheat pasta or gluten-free options.
