- 1 lb flank or skirt steak
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper, to taste
- 2 ears of corn (or 1 1/2 cups frozen corn)
- 1 large avocado, diced
- 2 cups cooked rice or mixed greens
- 1/4 cup crumbled cotija or feta cheese (optional)
- For the Cilantro Cream Sauce:
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup fresh cilantro leaves
- 1 tablespoon lime juice
- 1 small garlic clove
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Season steak with olive oil, chili powder, cumin, salt, and pepper. Let sit for 15–30 minutes at room temperature.
- Roast the corn: grill ears of corn until lightly charred, or sauté frozen corn in a dry skillet until browned. Let cool, then cut kernels off the cob if using fresh.
- Grill or pan-sear the steak over medium-high heat for 4–5 minutes per side (depending on thickness). Rest for 5–10 minutes, then slice thinly against the grain.
- In a blender or food processor, combine all cilantro cream sauce ingredients. Blend until smooth. Adjust salt or lime to taste.
- Assemble the bowls: start with a base of rice or greens, then top with steak slices, roasted corn, diced avocado, and cheese if using.
- Drizzle with cilantro cream sauce and serve immediately.
Notes
- For a lighter version, use Greek yogurt in the sauce and serve over greens instead of rice.
- Make it vegetarian by swapping steak for grilled portobello mushrooms or black beans.
