Strawberry Delight is a layered no-bake dessert made with a buttery graham cracker crust, creamy cheesecake filling, sweet strawberry topping, and whipped topping. It’s light, refreshing, and perfect for spring and summer gatherings.

- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar (for crust)
- 1 package (8 oz) cream cheese, softened
- 1/2 cup powdered sugar
- 1 container (8 oz) whipped topping (like Cool Whip), thawed
- 1 package (3 oz) strawberry gelatin (Jell-O)
- 1 cup boiling water
- 1 cup cold water
- 2 cups fresh strawberries, sliced
- Additional whipped topping, for garnish (optional)
Instructions
- In a bowl, mix graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a 9×13-inch dish to form the crust. Chill while preparing the filling.
- In a separate bowl, beat the cream cheese and powdered sugar until smooth and creamy.
- Fold in half of the whipped topping and spread over the chilled crust.
- Dissolve the strawberry gelatin in boiling water, then stir in cold water. Let it cool slightly (not set).
- Arrange sliced strawberries over the cream cheese layer.
- Pour the cooled gelatin over the strawberries carefully.
- Refrigerate the dessert for at least 4 hours, or until fully set.
- Top with additional whipped topping before serving, if desired.
Notes
- Use frozen strawberries if fresh are out of season—just thaw and drain them first.
- You can substitute vanilla wafer or shortbread cookie crumbs for the crust.
- Add a splash of lemon juice to the cream cheese filling for a slight tang.
