  • 1 tsp rum extract
  • 1 tsp lemon extract

Instructions

  1. Preheat oven to 325°F (163°C). Grease and flour a bundt or tube pan.
  2. In a large mixing bowl, cream butter, shortening, and sugar together until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Combine milk with all five extracts.
  6. Alternately add the dry ingredients and the milk mixture to the creamed mixture, starting and ending with the dry ingredients. Mix until just combined.
  7. Pour half of the batter into the prepared pan. Spoon warmed strawberry preserves over the batter and swirl gently with a knife.
  8. Top with the remaining batter and smooth the top.
  9. Bake for 75–85 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
