- 3 cups cooked chicken, shredded
- 1 (15 oz) can corn, drained
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- 1 jalapeño, seeded and diced (optional)
- 1 tsp chili powder
- 1/2 tsp cumin
- 1 tsp garlic powder
- Juice of 1 lime
- 2 cups shredded Monterey Jack or Mexican blend cheese
- Salt and pepper to taste
- Crumbled Cotija cheese and extra cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine cooked chicken, corn, mayonnaise, sour cream, cilantro, green onions, jalapeño (if using), chili powder, cumin, garlic powder, lime juice, 1 1/2 cups shredded cheese, salt, and pepper. Mix well.
- Spread the mixture evenly into the prepared baking dish.
- Top with the remaining 1/2 cup of shredded cheese.
- Bake for 25–30 minutes, or until bubbly and lightly golden on top.
- Remove from oven and garnish with crumbled Cotija cheese and additional cilantro before serving.
