Description

Street Corn Chicken Casserole is a comforting and flavor-packed dish that brings the vibrant taste of Mexican street corn into a hearty baked meal. Juicy chicken, sweet corn, cheese, and a creamy, tangy sauce come together for a casserole that’s perfect for busy weeknights or feeding a crowd.

  • 3 cups cooked chicken, shredded
  • 1 (15 oz) can corn, drained
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1 jalapeño, seeded and diced (optional)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 tsp garlic powder
  • Juice of 1 lime
  • 2 cups shredded Monterey Jack or Mexican blend cheese
  • Salt and pepper to taste
  • Crumbled Cotija cheese and extra cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine cooked chicken, corn, mayonnaise, sour cream, cilantro, green onions, jalapeño (if using), chili powder, cumin, garlic powder, lime juice, 1 1/2 cups shredded cheese, salt, and pepper. Mix well.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Top with the remaining 1/2 cup of shredded cheese.
  5. Bake for 25–30 minutes, or until bubbly and lightly golden on top.
  6. Remove from oven and garnish with crumbled Cotija cheese and additional cilantro before serving.
