Description

Classic stuffed green peppers filled with a savory mixture of ground beef, rice, tomatoes, and seasonings, then baked until tender and flavorful. A wholesome, comforting family meal.


Ingredients

  • 6 large green bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella or cheddar cheese (optional)
  • 2 cups tomato sauce
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the green peppers and remove seeds and membranes. Blanch peppers in boiling water for 3–4 minutes, then drain and set aside.
  3. In a skillet over medium heat, warm olive oil. Add onion and garlic, cooking until softened.
  4. Add ground beef and cook until browned. Drain excess fat.
  5. Stir in cooked rice, diced tomatoes, oregano, salt, and pepper. Cook for 2–3 minutes until combined.
  6. Stuff each pepper with the beef mixture and place in a baking dish.
  7. Pour tomato sauce evenly over the peppers. Cover with foil and bake for 30 minutes.
  8. Remove foil, top with cheese if using, and bake for an additional 10 minutes until cheese is melted and peppers are tender.

Notes

  • For a lighter version, use ground turkey or chicken instead of beef.
  • Add chopped vegetables like zucchini or mushrooms to the filling for extra flavor and nutrition.
  • Peppers can be assembled ahead and refrigerated for up to 24 hours before baking.
  • Serve with crusty bread or a fresh salad for a complete meal.
