- 1 1/2 lbs (680g) Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 2 tablespoons unsalted butter
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- Optional: 1/4 teaspoon red pepper flakes for heat
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, toss halved Brussels sprouts with olive oil, salt, and pepper.
- Spread them cut-side down on the baking sheet. Roast for 20–25 minutes or until crispy and browned on the edges.
- While Brussels sprouts are roasting, melt butter in a small saucepan over low heat. Stir in honey and balsamic vinegar. Add red pepper flakes if using.
- When Brussels sprouts are done, transfer to a large bowl and toss with the honey-balsamic glaze.
- Serve warm as a side dish.
Notes
- For extra crunch, sprinkle with toasted chopped pecans or walnuts before serving.
- Add a sprinkle of crumbled goat cheese or feta for creaminess.
