- 4 boneless, skinless chicken breasts
- 1/2 cup sweet chili sauce
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp grated fresh ginger
- Salt and black pepper, to taste
- 1 tbsp vegetable oil
Instructions
- In a bowl, whisk together sweet chili sauce, soy sauce, honey, rice vinegar, garlic, and ginger.
- Season chicken breasts with salt and pepper.
- Place chicken in a resealable plastic bag or shallow dish and pour half of the glaze over the chicken. Marinate for at least 30 minutes, up to 2 hours in the refrigerator.
- Preheat the grill to medium-high heat and oil the grates.
- Remove chicken from marinade, reserving the marinade.
- Grill chicken for 5-7 minutes per side, brushing occasionally with the reserved glaze, until cooked through and internal temperature reaches 74°C (165°F).
- Remove from grill and let rest for 5 minutes before serving.
Notes
- For extra caramelization, brush the chicken with glaze during the last few minutes of grilling.
- Serve with steamed rice or grilled vegetables for a complete meal.
- Use boneless thighs for a juicier alternative.
