Description

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 bell peppers (red and yellow), sliced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1/4 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add garlic and sauté for 30 seconds until fragrant.
  3. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.
  4. In the same skillet, add sliced bell peppers and stir-fry for 3-4 minutes until slightly tender but still crisp.
  5. Return shrimp to the skillet.
  6. Pour in sweet chili sauce, soy sauce, and rice vinegar. Stir to coat everything evenly.
  7. Cook for another 1-2 minutes until heated through and sauce thickens slightly.
  8. Season with salt, pepper, and red pepper flakes if using.
  9. Garnish with sliced green onions and serve immediately with steamed rice or noodles.

  • Use fresh or frozen shrimp (thawed) for best results.
