This Sweet Potato, Feta & Caramelised Onion Tart is a savory, comforting dish featuring tender roasted sweet potatoes, tangy feta cheese, and sweet caramelised onions on a flaky pastry base. It’s perfect for brunch, lunch, or a light dinner.

- 1 sheet puff pastry (thawed if frozen)
- 1 medium sweet potato, peeled and thinly sliced
- 2 tbsp olive oil, divided
- 1 large onion, thinly sliced
- 1 tsp balsamic vinegar
- 3.5 oz (100g) feta cheese, crumbled
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- Salt and pepper to taste
- 1 egg, beaten (for egg wash – optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
- Heat 1 tbsp olive oil in a pan over medium heat. Add sliced onions and cook slowly, stirring occasionally, for about 15–20 minutes until deeply golden. Add balsamic vinegar in the last 2 minutes. Set aside.
- Toss sweet potato slices with 1 tbsp olive oil, salt, and pepper.
- Place puff pastry sheet on the prepared tray. Lightly score a border about 1/2 inch from the edge. Prick the center with a fork.
- Spread caramelised onions evenly over the pastry base (inside the border). Layer sweet potato slices over the onions. Top with crumbled feta and sprinkle with thyme.
- Brush the edges of the pastry with beaten egg for a golden finish (optional).
- Bake for 25–30 minutes until pastry is golden and crisp, and sweet potatoes are tender.
- Let cool slightly before slicing. Serve warm or at room temperature.
Notes
- Use goat cheese or ricotta as a substitute for feta if desired.
- Pairs well with a simple green salad.
- Can be made ahead and reheated in the oven.
