  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 2 cups broccoli florets
  • 2 cups cooked white or brown rice (for serving)
  • For the Teriyaki Sauce:
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup water
  • 1/4 cup honey or brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh grated ginger (or 1/4 tsp ground ginger)

Instructions

  1. In a small saucepan over medium heat, combine soy sauce, water, honey (or brown sugar), rice vinegar, garlic, and ginger. Bring to a simmer.
  2. Stir in the cornstarch slurry and continue to simmer for 2–3 minutes, stirring constantly, until the sauce thickens. Remove from heat and set aside.
  3. In a large skillet or wok, heat vegetable oil over medium-high heat. Add chicken and cook until browned and cooked through, about 6–8 minutes.
  4. While the chicken cooks, steam or blanch the broccoli until bright green and just tender, about 3–4 minutes. Set aside.
  5. Once the chicken is cooked, pour the teriyaki sauce over it and stir to coat evenly. Let simmer for 1–2 minutes to heat through.
  6. To assemble bowls, divide cooked rice among serving bowls. Top with teriyaki chicken and steamed broccoli.
  7. Optional: garnish with sesame seeds, sliced green onions, or a drizzle of sriracha.

Notes

  • Use chicken thighs for juicier meat, or tofu for a vegetarian option.
  • Double the sauce if you like extra for drizzling over the rice.
  • Make it spicy by adding red pepper flakes or chili paste to the sauce.
