- 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 2 cups broccoli florets
- 2 cups cooked white or brown rice (for serving)
- For the Teriyaki Sauce:
- 1/2 cup low-sodium soy sauce
- 1/4 cup water
- 1/4 cup honey or brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
- 2 cloves garlic, minced
- 1 teaspoon fresh grated ginger (or 1/4 tsp ground ginger)
Instructions
- In a small saucepan over medium heat, combine soy sauce, water, honey (or brown sugar), rice vinegar, garlic, and ginger. Bring to a simmer.
- Stir in the cornstarch slurry and continue to simmer for 2–3 minutes, stirring constantly, until the sauce thickens. Remove from heat and set aside.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add chicken and cook until browned and cooked through, about 6–8 minutes.
- While the chicken cooks, steam or blanch the broccoli until bright green and just tender, about 3–4 minutes. Set aside.
- Once the chicken is cooked, pour the teriyaki sauce over it and stir to coat evenly. Let simmer for 1–2 minutes to heat through.
- To assemble bowls, divide cooked rice among serving bowls. Top with teriyaki chicken and steamed broccoli.
- Optional: garnish with sesame seeds, sliced green onions, or a drizzle of sriracha.

- Use chicken thighs for juicier meat, or tofu for a vegetarian option.
- Double the sauce if you like extra for drizzling over the rice.
