Ingredients
Scale
- 4 slices brioche bread
- 1 tablespoon butter
- 1 cup fresh pineapple, diced
- 1 tablespoon brown sugar
- 1/2 teaspoon chili flakes (adjust to taste)
- 1 tablespoon honey
- 1 ball (8 oz) burrata cheese
- Fresh mint leaves, for garnish
- Pinch of sea salt
Instructions
- In a skillet over medium heat, melt butter and add diced pineapple, brown sugar, and chili flakes.
- Cook, stirring occasionally, until the pineapple caramelizes and becomes golden and sticky, about 6–8 minutes.
- Drizzle in honey and cook for 1 more minute, then remove from heat.
- Lightly toast the brioche slices until golden and crisp.
- Tear burrata and spread generously over each toast.
- Spoon caramelized pineapple over the burrata, letting the juices soak slightly into the bread.
- Garnish with fresh mint leaves and a pinch of sea salt. Serve warm.
Notes
- Use day-old brioche for better structure and crispness when toasted.
- Adjust chili flakes to your spice preference or swap for hot honey.
- Great paired with a chilled glass of rosé or sparkling wine.
