Description

  • 1 tablespoon butter
  • 1 cup fresh pineapple, diced
  • 1 tablespoon brown sugar
  • 1/2 teaspoon chili flakes (adjust to taste)
  • 1 tablespoon honey
  • 1 ball (8 oz) burrata cheese
  • Fresh mint leaves, for garnish
  • Pinch of sea salt

Instructions

  1. In a skillet over medium heat, melt butter and add diced pineapple, brown sugar, and chili flakes.
  2. Cook, stirring occasionally, until the pineapple caramelizes and becomes golden and sticky, about 6–8 minutes.
  3. Drizzle in honey and cook for 1 more minute, then remove from heat.
  4. Lightly toast the brioche slices until golden and crisp.
  5. Tear burrata and spread generously over each toast.
  6. Spoon caramelized pineapple over the burrata, letting the juices soak slightly into the bread.
