Description

The King’s Banana Nut Crunch is a rich and satisfying breakfast or dessert dish inspired by Elvis Presley’s favorite flavor combo: bananas, peanut butter, and nuts. This baked banana oat dish features a crunchy nut topping and a creamy, peanut buttery base—perfect for brunch, snacks, or indulgent mornings.

Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1/2 cup peanut butter (creamy or chunky)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 cups rolled oats
  • 1/4 cup milk (dairy or plant-based)
  • 1/4 tsp salt
  • 1/2 cup chopped walnuts or pecans
  • 2 tbsp brown sugar (optional for topping)
  • Butter or oil for greasing

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a large bowl, combine mashed bananas, peanut butter, honey (or maple syrup), vanilla, cinnamon, milk, and salt. Mix well.
  3. Stir in rolled oats until fully combined.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Top with chopped nuts and sprinkle with brown sugar if using.
  6. Bake for 25–30 minutes, or until set and golden on top.
  7. Let cool slightly before cutting into squares. Serve warm or at room temperature.

Notes

  • Great as a make-ahead breakfast or snack.
  • Add chocolate chips for extra indulgence.
  • Use almond butter or sunflower seed butter as a peanut-free alternative.
  • Can be stored in the fridge for up to 5 days and reheated as needed.
