- 2 pounds baby potatoes, halved
- 3 tablespoons olive oil
- 1 cup freshly grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried Italian herbs
- Salt and black pepper, to taste
- 2 tablespoons unsalted butter, melted
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a small bowl, combine Parmesan cheese, garlic powder, smoked paprika, Italian herbs, salt, and pepper.
- Brush melted butter evenly onto the parchment paper, then sprinkle the Parmesan mixture evenly over the buttered area.
- Arrange halved potatoes cut-side down on top of the cheese layer. Press gently so the cut side makes full contact with the Parmesan mixture.
- Drizzle olive oil over the potatoes and season lightly with additional salt and pepper if desired.
- Roast for 30–35 minutes, or until potatoes are tender inside and the bottoms are crispy and golden.
- Let the potatoes rest for 2–3 minutes before carefully lifting them from the pan to keep the crust intact.
- Garnish with fresh parsley and serve immediately.
