- 4 Italian Tuscan sausages
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 4 sandwich rolls or ciabatta buns
- 4 slices provolone or mozzarella cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: fresh basil leaves or arugula
Instructions
- Heat olive oil in a skillet over medium heat. Add sliced peppers and onions, season with salt and pepper, and sauté until soft and caramelized, about 8-10 minutes.
- In another pan, cook the Tuscan sausages until browned and cooked through, about 10-12 minutes. Slice sausages into bite-sized pieces.
- Preheat the oven broiler or sandwich press.
- Slice the sandwich rolls and layer each with cooked sausage, sautéed peppers and onions, and a slice of cheese.
- Place the sandwiches under the broiler or in the sandwich press until the cheese melts and bread is toasted, about 3-5 minutes.
- Add fresh basil or arugula if desired, then serve hot.

- Try adding a spread of pesto or mustard for extra flavor.
