Description

Turkey Taco Skillet is a quick, one-pan meal loaded with lean ground turkey, seasoned with taco spices, and served with colorful vegetables. It’s a healthy and flavorful option for busy weeknights.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 packet taco seasoning mix (or homemade seasoning)
  • 1/2 cup water
  • 1 can (15 oz) diced tomatoes, drained
  • 1/2 cup corn kernels (fresh or frozen)
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
  2. Add the diced onion, bell pepper, and zucchini to the skillet and cook for 4–5 minutes, until the vegetables are tender.
  3. Stir in the taco seasoning mix and water, mixing until the turkey and vegetables are evenly coated in the seasoning.
  4. Add the diced tomatoes and corn, and stir to combine. Cook for another 2–3 minutes until heated through and well combined.
  5. Season with salt and pepper to taste, and remove from heat.
  6. Serve the turkey taco skillet with your favorite toppings, such as shredded cheese, sour cream, chopped cilantro, or sliced jalapeños, if desired.

Notes

  • For a spicier dish, add sliced jalapeños or a sprinkle of chili flakes to the skillet.
  • To make this dish even more nutritious, add black beans or serve over a bed of quinoa or brown rice.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
