Turkey Taco Skillet is a quick, one-pan meal loaded with lean ground turkey, seasoned with taco spices, and served with colorful vegetables. It’s a healthy and flavorful option for busy weeknights.

- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 packet taco seasoning mix (or homemade seasoning)
- 1/2 cup water
- 1 can (15 oz) diced tomatoes, drained
- 1/2 cup corn kernels (fresh or frozen)
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced jalapeños
Instructions
- Heat olive oil in a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
- Add the diced onion, bell pepper, and zucchini to the skillet and cook for 4–5 minutes, until the vegetables are tender.
- Stir in the taco seasoning mix and water, mixing until the turkey and vegetables are evenly coated in the seasoning.
- Add the diced tomatoes and corn, and stir to combine. Cook for another 2–3 minutes until heated through and well combined.
- Season with salt and pepper to taste, and remove from heat.
- Serve the turkey taco skillet with your favorite toppings, such as shredded cheese, sour cream, chopped cilantro, or sliced jalapeños, if desired.
Notes
- For a spicier dish, add sliced jalapeños or a sprinkle of chili flakes to the skillet.
- To make this dish even more nutritious, add black beans or serve over a bed of quinoa or brown rice.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
